Hello Friday!

Funny Story (sort of) – For Wednesday’s post (Protein Pancake Recipe) I cooked, filmed, and wrote everything the week of January 13th . . . knowing I was going to be on my lovely Florida vacation this week . . . or so I thought! I wrote the initial introduction of the post with the idea that I’d be at the beach, enjoying the sunshine, taking lovely strolls, and drinking tropical drinks. The post went online just as I had scheduled it . . . only I was not on my beach vacation. I was freezing my tookus off here at home. So, I want to apologize for any confusion that may have caused for some early morning readers. Thankfully, my mom saw it before I did, and she alerted me that my location was “not exactly” accurate!

What do we do when we were supposed to be on a Beach Vacation this week, but Mother Nature had other plans? We call it a “Bonus Week at Home”! I’ve tried to use my “bonus week” to get a few things done around the house: some cleaning out, some organizing, and getting caught up on stuff that I normally find ways to avoid.

It has been really REALLY cold up here in the Colorado Rockies this week . . . like minus 19 degrees kind of cold . . . so mostly I’ve been in hibernation mode. I’ve worn all my fuzzy socks, flannel, and fleece on repeat, and there may or may not be a Chris-shaped indentation on our couch. Maybe I should plan to put on real clothes and get out this weekend!?

Whether they’re homemade or store-bought, I’ve got some great snacks for you to try!

The keys to fueling up with snacks are planning and preparation. Being intentional in the way we set ourselves up for success allows us to get a boost of protein to support our:

  • energy level
  • muscle mass
  • brain health
  • bone health
  • blood pressure
  • blood sugar
  • lower cortisol levels

It seems like most of us will be thawing out from the Polar Vortex this weekend. I hope you all have something fun planned!
