Stop the presses! I have never posted twice in one day. BUT, I came up with a recipe that I had to share with you guys STAT!
You know those days when you wake up and you’re super groggy, and it’s just kind of hard to get yourself going? And on said days, what you really want for breakfast is a bowl of cookie dough? Umm, is that just me? Did I just out myself as a 12-year-old in the body of a 56-year-old?
If there were such a thing as a cookie dough sommelier, I would be more than qualified. I can describe subtleties in taste and texture like the true connoisseur that I am. So I am not exaggerating when I say that I’ve nailed it with this Gut Healthy, High Protein Cookie Dough.
There are a lot of “healthy cookie dough” recipes out there, and I’ve tried several. But, I just haven’t found one that hits just right. So this morning, when I couldn’t get excited about eating a grown-up adult breakfast, I pulled out these ingredients and started playing around with ideas until I had that “Eureka” moment.
How freaking good does this look?!?! It also tastes amazing. Now, in full transparency, if I were doing a side-by-side taste test between this recipe and the original Tollhouse cookie dough recipe (with butter, tons of sugar, eggs, white flour) . . . Yes, I’d be able to tell the difference. But truly, this gut-healthy high protein version is so yummy and completely satisfies that “I just need to eat cookie dough” craving. (Please tell me I’m not the only who gets that).
Gareth walked in while I was enjoying my little bowl of cookie dough, and he gave me a questioning look. (To his credit, he knew better than to say anything).
When we discussed what I was doing, he said, “Shouldn’t you call it something other than cookie dough because there’s such a stigma with it being unsafe?”
That. Right there. The code has been cracked in the difference between men and women. Men do not understand the visceral appeal of cookie dough.
But we get it, don’t we, Friends? So, without further delay . . . make this and sovor it! And enjoy the fact that you can enjoy something that seems oh so naughty but is, in fact, oh so nice!

Gut-Healthy, High-Protein Cookie Dough
Mix it up and enjoy! I ate half of this for my breakfast and chilled the other half in the fridge. I think it would be great to make little cookie dough bites as snacks. I would double this recipe and place scoops onto a parchment-lined plate and let them chill until firm. Then they could be stored in an airtight container in the fridge to enjoy all week!
