Hey Friends! Hope everyone is having a great first week of Spring! I’m excited to be linking up with Mix & Match Mama and Sheaffer Told Me To for their What’s Up Wednesday series. They provide the questions, and I provide the answers, so here we go!
What I’m Reminiscing About
We just returned from our adventure in Scottsdale with our Boulder Besties, and we had a wonderful, totally chill time! We stayed with my parents, which was so much fun! I am grateful, everyday, for how well my parents are doing. They should teach a master class on healthy aging.
Per usual, I totally dropped the ball on posting on instagram. Why is this so hard for me?? Hopefully it means I’m living in the moment. Since I failed on that one, I’ll give you guys a little recap with the few (and I do mean FEW photos I took on our trip).

Early, Thursday morning, we left this weather behind and . . .
. . . met up with our friends, Dolf & Sue, at the airport in Denver. After a quick flight, we landed in Phoenix, where the weather was perfection! We grabbed our rental car and drove up to my parents’ house in North Scottsdale.

We played some bacce ball, made a new – BIG – reptilian friend, and soaked up every bit of the beautiful weather and scenery. The boys golfed, the girls did some shopping, lunching, and plenty of magazine reading/napping by the pool. We ate some delicious meals, and just truly enjoyed each other’s company.

What I’m Excited About

This girl (plus 23 years 😭) arrives tomorrow! Emily started shredding the slopes when she was 4-years-old, and she’s flying in from NYC to crush it for a long weekend! I’m so excited to have her home!! But, we will miss her adorable husband, Joe, who’s living that first-year-associate-big-law-life.
I’m also excited that we are having true Mountain Springtime weather. Warmer temps and lots of sunshine remind me that our gorgeous summer will be here soon-ish!
What I’m Dreading
I’m not really dreading anything! If I have to give an answer – I’ll say it’s a tie between:
- Going to the Dermatologist in a couple of weeks. Don’t get me wrong, I really like my dermatologist, so much so that I go every 6 months . . . (because I’ve had so many issues with basal cell skin cancer as a result of the terrible way I abused my skin with the sun growing up and through my teens and early 20’s. Ugh). She usually has to freeze several things off and that is definitely worth dreading. BUT, I’ll take it over having to get Mohs surgery!
- The inevitble late spring snows that we’ll get. I love living here. Truly. But by May I’m done with the snow. Unfortunately, it won’t be done with us.
What I’m Reading:
I’m currently reading The Wedding People by Alison Espach. Emily’s precious maid of honor, Michaela, bought her this book to read right before their Rhode Island wedding. It’s a much meatier read than the wedding rom-com I was expecting, and I’m thoroughly enjoying it!

I’m about to have to put The Wedding People aside for a couple of weeks to read Go As A River by Shelley Read for my book club. We typically read a couple of Colorado books a year, and this is our next read. I’m looking forward to it, and I’ll let you know what i think!
What I’m Watching:
Oh Boy. We just finished season two of Severance. This show has generated so much buzz and chatter, and we got caught up in all the crazy! It’s super weird and bizarre, and we have no idea what’s going on, but we are hooked. 😂

We’re watching each episode of 1923 as they drop. Yeesh, we love this show! Harrison Ford and Helen Mirren are so good, and my boyfriend, Brandon Sklenar (Spencer, the lion hunter) is swoon worthy.
What I’m Working On
I’m busy with all the things! Work stuff. House stuff. Friend stuff. Family stuff.
I’m working on a few new things for Elevated Nesting, and I would LOVE to hear from you if you have any questions or specific topics you’d like to learn more about! Let me know, Friends!!
I’m also busy with prepping some meals and snacks for Emily’s visit so I can spend less time in the kitchen and more time doing fun things with her!
What We’re Eating This Week
I’m making meatloaf for Emily’s first night here – lol. I know that sounds super lame, but I have a truly delicious and unique recipe for it (that I’ll be sharing next week). It’s a great one for prepping early. When she was little, it was one of Emily’s very favorite meals, and she called it “Mommy’s Famous Meatloaf”. So, I mean – honestly, how can I not make it??

I’m also making a big batch of my Protein Packed Peanut Butter Chocolate Chip Muffins to have on hand for breakfasts and snacks . . .
. . . as well as my Protein Boosted Egg Bites for fast, delicious pre-ski breakfasts

I’m excited to make Emily my Chicken and White Wine Stew with Plenty of Fresh Herbs and Veggies. This will be a perfect, cozy Apres Ski dinner!
What I’m Looking Forward to This Spring
Emily and Gareth have run a half marathon together for the last two springs. In 2023, they ran the San Diego Rock and Roll Half (which is why my husband is dressed as Elvis and wearing that wig . . . and that’s all I have to say about that). In 2024, they ran the Brooklyn Half. At the end of April, we’ll be off on another adventure for their next race, and I’m soooo excited about this location!

And then in May . . .
This silly little guy is graduating from College. I’m so excited for him, but seriously . . . How is this even possible?? My babies grew up Way. Too. Fast.

And that’s a wrap for me today, Friends! Between our trip and Emily’s visit, I’m having a very abbreviated, one post week. Thank you so much for spending a little time with me today! I’ll see you back here next week!
Also, excited to be linking up on:
